I absolutely love enchiladas, and I was pleasantly surprised that I didn’t even miss the tortilla with this Southwest Zucchini Roll Up recipe! It’s like eating a chicken enchilada but wrapped in zucchini. It could just as well be called a Zucchini Chicken Enchilada. I like the sound of Zucchini Roll Ups since I did all that work of rolling the sliced zucchini around the chicken mixture. Southwest Zucchini Roll Ups are a delicious and appetizing way to use up your zucchini and make everyone think they are eating a chicken enchilada! I love using zucchinis in all sorts of recipes, from dinners to desserts. Serve Zucchini Soup as an appetizer or light meal.

Zucchini in a dessert, you say? Yes, it is possible to make a delightful treat using zucchini. When I bit into this bar, I couldn’t stop at one bite. I ended up eating the whole piece, and I could have eaten the whole pan if I didn’t have to share. Nothing hinted at a vegetable being a part of this treat. The butterscotch flavor was very balanced and gave the bar just enough butterscotch sweetness.

Summer months are meant for grilling. In Minnesota, we absolutely crave it this time of year. If you can cook it over the hot grill (or coals), we typically do. We just finished up our Chicken Caprese Salad when we came up with this brilliant little recipe. So we took some of the basic elements of the salad and deconstructed it into a kebab. This light and fresh summer kebabs will literally fly right off of the skewers. Bratwursts are one of my favorite things to eat in the hot summer months. It honestly doesn’t even need to be that hot. As soon as the sun starts to melt the snow we start talking about brats and hot dogs. Its sort of how we thaw out around here. In my humble opinion, there are two ways to make brats. You can grill them or you can use this method and soak them in a tangy beer marinade for hours and hours until they are bursting with flavor. Oh, and smothering them in homemade marinated onions is a bonus you won’t want to skip.

I have always been a big fan of pineapple. So adding it to a savory dish, for me at least, wasn’t much of a stretch. People put pineapple on pizza all of the time! This should work too, right? Right. The result was clear instantly: it does work and you need to try it as soon as humanly possible. The sweet and savory nature of this dish is complete summer perfection. You will barely get the food off the skewer before it is being devoured.Hawaiian Chicken Kebabs are one of the greatest things to ever happen to a skewer. Juicy and flavorful marinated chicken, complemented by bell peppers, fresh pineapple, and red onions, all grilled to perfection. Each bite is filled with flavor and screams summer!

The inspiration behind this amazing grilled cheese sandwich came from my BBQ Chicken Sliders. We decided that the garlic butter we use on the slider would make a great coating on a sturdy white bread like sourdough. Unlike the soft dinner roll used in the sliders, these grilled cheese sandwiches have an amazingly flavorful and crispy sandwich bread, which was a major hit with the kids. We used our classic shredded chicken recipe to whip up a big batch of these mouth-watering cheesy sandwiches! BBQ Chicken Grilled Cheese Sandwiches are the perfect addition to any dinner table. Garlicky buttered french bread is pan-fried to perfection and paired with the savory flavors of BBQ chicken and the oh so creamy, melted Havarti Cheese.

The idea for this Mushroom Swiss Cheeseburger Pasta came from a combination of crazy recipes I was determined to make. After ordering a Cheeseburger at a local bar I decided that I wanted to make that into a pasta. I took the basic components of a cheeseburger, created my own unique cheese sauce and presto, I developed a cheeseburger pasta. Now, once my family tried it, we decided it was so delicious (it’s AMAZEBALLS), we started to wonder if there were any other burger variations that could potentially be turned into a pasta dish. The wheels were turning and we discussed Mushroom Swiss Pasta. After testing out a few variations (we tested this recipe for days!!) on a cheese and mushroom sauce blend, I finally found the perfect combination. If you are a mushroom swiss fan, you are going to swoon when you try this recipe!

Why is there so much confusion about scalloped potatoes versus Au Gratin Potatoes? Well, they are very similar. So, we are calling our dish cheesy scalloped potatoes, and let me explain why we can do that. We are basically combining the best parts of both dishes. A traditional scalloped potato dish consists of sliced potatoes layered in a casserole dish and baked with heavy cream and lots of herbs. A traditional Au Gratin Potato dish, on the other hand, has grated cheese sprinkled between the layers, resulting in a cheesy, more decadent dish. In both dishes, the potatoes are cut into rounds, but the potatoes used in scalloped potatoes are often cut a bit thicker than those in au gratin potatoes.

This easy Brussel sprout breakfast bake recipe will convert all the Brussel sprout haters to Brussel sprout lovers. I would argue, that you might THINK you are a Brussel sprout hater, they get a bad reputation, but if you try them (especially cooked this way) you’ll convert immediately. As a child, I put Brussel Sprouts in the Asparagus category with the heading “yuck”. As my palate became more refined and I grew up and stopped being so stubborn, I quickly realized that I had spent literally years missing out on this glorious dish. Brussel sprouts are so good that I am actually angry with myself for THINKING these wouldn’t taste good. They are amazing and have so many health benefits. There are a hundred ways to cook them like balsamic roasted brussel sprouts and parmesan roasted brussel sprouts. If you aren’t convinced yet, don’t worry, I’ll keep trying. 😉

Chicken Cordon Bleu Casserole

The foundation for this Chicken Cordon Bleu Casserole recipe is the traditional Chicken Cordon Bleu dish, which is essentially a chicken breast, pounded thin, stuffed with a slice of ham and a slice of Swiss cheese. It can be baked or fried and then is typically smothered in a creamy sauce. Here we take all of that and put in the comfort and ease of a casserole. Who doesn’t love a good casserole?! I mean, you can make them ahead of time and pop them in the oven when you are ready. They are usually easy to convert to a slow cooker meal, and they are perfect for feeding a hungry family!
